Chicken Fajitas Sheet Pan
Ingredients:
Fajita Filling:
- 1 ½ pounds boneless skinless chicken (sliced into ½ inches thick)
- 3 colored bell peppers (cored & sliced into strips)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 3 Tablespoons olive oil
- 2 Tablespoons fresh lime juice
Seasoning:
- 2 teaspoons chili powder
- 1 ½ teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1 ½ teaspoon salt
- 1/2 teaspoon pepper
Directions:
- Preheat oven to 400°F
- For the seasoning: In a small mixing bowl whisk together chili powders, cumin, paprika, coriander, salt and pepper, set aside.
- For the fajita filling: Spread bell peppers and yellow onion onto baking sheet.
- Top with chicken then sprinkle garlic and seasoning evenly over chicken.
- Drizzle olive oil over top then toss everything to evenly coat. Spread into an even layer working to keep chicken from overlapping.
- Roast in preheated oven, tossing once halfway through cooking, until veggies are tender and chicken has cooked through (about 18 - 25 minutes).
- Drizzle lime juice evenly over top of fajita filling.
- Serve with tortillas and desired toppings.
Notes: Topings: tortillas, tomatoes, cheese, shredded lettuce, sour cream or anything you enjoy :)
