Ingredients:

  • 4 boneless skinless chicken breasts
  • 1 cup bbq sauce
  • 15 oz can pineapple slices (including juice)
  • 2 teaspoons soy sauce
  • 1 teaspoon garlic powder

Homemade BBQ sauce:

  • 1 cup ketchup
  • 1/3 cup molasses
  • 1/3 cup brown sugar
  • 3 Tablespoons cider vinegar
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt

Directions:

  • Preheat oven to 375°F. Put a sheet of aluminum foil on the bottom of a baking dish. Place chicken on the aluminum foil.
  • In a bowl, whisk together bbq sauce, juice from the can of pineapple slices, soy sauce, and garlic. Spread sauce on the chicken. Add pineapple slices to the top of each chicken.
  • Bake uncovered for an hour (or until chicken is done)

Homemade BBQ sauce:

  1. In a medium sauce pan stir together ketchup, molasses, brown sugar, cider vinegar, Worcestershire sauce, paprika, chili powder, onion powder, and salt.
  2. Bring to a simmer over medium heat and cover with a lid. Let cook stirring occasionally until the sauce thickens about 10-15 minutes. Can use right away or let cool and store in an airtight container for about a week.
