Hawaiian Barbecue Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- 1 cup bbq sauce
- 15 oz can pineapple slices (including juice)
- 2 teaspoons soy sauce
- 1 teaspoon garlic powder
Homemade BBQ sauce:
- 1 cup ketchup
- 1/3 cup molasses
- 1/3 cup brown sugar
- 3 Tablespoons cider vinegar
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
Directions:
- Preheat oven to 375°F. Put a sheet of aluminum foil on the bottom of a baking dish. Place chicken on the aluminum foil.
- In a bowl, whisk together bbq sauce, juice from the can of pineapple slices, soy sauce, and garlic. Spread sauce on the chicken. Add pineapple slices to the top of each chicken.
- Bake uncovered for an hour (or until chicken is done)
Homemade BBQ sauce:
- In a medium sauce pan stir together ketchup, molasses, brown sugar, cider vinegar, Worcestershire sauce, paprika, chili powder, onion powder, and salt.
- Bring to a simmer over medium heat and cover with a lid. Let cook stirring occasionally until the sauce thickens about 10-15 minutes. Can use right away or let cool and store in an airtight container for about a week.
