Ingredients:

  • 3 - 4 lb. chuck roast
  • 4 Tablespoons olive oil
  • 2 lbs. carrots
  • 2 lbs. potatoes

Meat Seasoning

  • 2 teaspoons brown sugar
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika

Gravy

  • 1 cup chicken broth
  • 2 cups beef broth
  • 1 cube beef bouillon, or 1 teaspoon better than bouillon
  • 1 and 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon low sodium soy sauce
  • 1 Tablespoon cold unsalted butter

Directions:

  1. Combine seasoning ingredients and rub the seasoning on all sides of the roast.
  2. Heat oil in a large pan over high heat. Sear on all sides until browned (3-5 minutes on each side).
  3. Whisk together the gravy ingredients and add it to the slow cooker, followed by the pot roast and any juices.
  4. Cut the potatoes in quarters of equal size. Skip this step if making mashed potatoes.
  5. Peel the carrots and slice them into halves.
  6. Place the lid on the slow cooker and try not to open it. Cook on high for 5-6 hours or low for 8-10.
  7. Remove the carrots, potatoes and roast and set on a serving platter.

Notes:

  • Serves 6
  • You can use the leftovers to make a yummy pot pie!
